Day 2: Simple Salad with a Cranberry Almond Vinaigrette

For day two of the spinach challenge, I made a simple salad of spinach, cranberries, almonds, and blue cheese with a cranberry almond vinaigrette.

Salad:

Toss some spinach, almonds, and cranberries together.  Top with blue cheese crumbles and the dressing.

 

Dressing:

1/2 cup white wine vinigar

1/4 cup olive oil

1/4 cup sugar

1 tablespoon almonds

1 cup cranberries

2 tablespoons almonds

1 teaspoon honey

Blend all together until turns into a smooth dressing.
