Day 7: Spinach, Mushroom, and Tomato Jam Frittata

Well, day seven.  I did it, despite my own doubts and initial thoughts that I would be so sick of spinach.  Ends up, I'm still fine with it and still viagra more I'll be cooking up these next few days.  For my last day, I have another breakfast item.  I'm never really around for lunch or dinner, so I end up cooking a lot of breakfasts.  Today's dish is a frittata.  An Italian dish, spiced up with my tomato chutney jam.  Frittatas are one of my favorites.  They are like the stew of the morning, where you can put anything in them, cleaning out the fridge of vegetables, cheeses, and meats about to go bad.  They're a great grab bag food that never seems to get old as often the same ones are never made twice.

Ingredients:

3 eggs

1/2 cup spinach

1/4 of a large red onion

3 mushrooms

4 cloves garlic

tomato chutney jam

salt and pepper

olive oil

Directions:

In a skillet with a little bit of olive oil on the bottom, caramelize the onions.  Add in the garlic, mushrooms, and spinach after a few minutes.  Cook over medium heat until brown and the spinach wilted.  Crack three eggs over the top, breaking the yolk and sprinkling salt and pepper over the top.  Cover and let cook until the eggs are throughly cooked.  Remove from the pan and spread the tomato jam over the top.
